1 medium carrot, shredded.
1 large egg.
2 garlic cloves, minced.
1-inch piece of ginger root.
3 small scallions, diced.
1 pound of ground turkey.
1/4 head of napa cabbage, sliced into thin strips.
2 tablespoons chili-garlic sauce.
2 tablespoons coconut aminos.
1 tablespoon red pepper flakes.
2 tablespoons mayonnaise of choice.
2 tablespoons toasted sesame oil.
2 tablespoons sesame seeds.
Salt to taste.
Pre-heat large skillet or wok over medium-high heat.
Wash and dry all produce.
Once the skillet is hot, add the sesame oil and swirl to coat the bottom of the pan.
Add the ground turkey to the skillet and break apart until the meat is browned and cooked.
Add minced garlic, carrots, and cabbage to the skillet.
Add coconut aminos, crushed red pepper, and salt to taste. Cook until cabbage and carrots are soft.
Drain excess liquid and turn the heat down to low.
Scramble egg and add to combine.
Serve in a bowl and top with spicy mayo, sesame seeds, and scallions.
